Even though summer is almost over it's never too late to share the love of ice cream pie. It's the perfect dessert for summer or any time of year really. I love it because one it tastes really good and two it's super easy to make and three the leftovers can be thrown right back into the freezer. It's the perfect thing for a hot day with friends.

1 container of chocolate chip cookie dough ice cream
1 8oz container of cool whip
1 oreo pie crust
1 jar of hot fudge

What I love about this recipe is that you can use any number of combinations of ice cream, pie crust and ice cream topping. The recipe I have here is really just a suggestion. You can create a pie with your favorite ice cream flavor and any of the readymade cookie crusts at the store. You can also use caramel topping instead of hot fudge. Here are a few more combos for consideration...
shortbread crust with: Cherry Chocolate chip and hot fudge
Butter Pecan and caramel topping garnished with pecans
Chocolate chip cookie dough and caramel topping
Peppermint ice cream with hot fudge garnished with crushed
oreo cookie crust with:Oreo cookie ice cream and hot fudge
Double fudge brownie and hot fudge (so rich)
Chocolate fudge swirl and hot fudge
Rocky Road with caramel topping and garnished with chopped
Mint Chocolate chip ice cream with hot fudge
These are just a few ideas; there are tons of different combinations out there.
Also this recipe can easily accommodate two pies. I typically make two at a time because one pie usually isn't enough. If you want to make two pies just use the larger 16oz coolwhip container and buy two pie crusts. The Hot fudge jar will cover two pies easily and one container of icecream will fill two pies as well.
